Easy Low-Carb Peanut Butter Energy Bites

If you're following a low-carb diet, these peanut butter balls are so easy to make, and are under 2 net carbs each. They taste way better than the Skippy brand P.B. Bites and are much healthier too! If you try them, let me know what you think! 😋

Ingredients:

  • 1/2 cup natural creamy peanut butter (no added sugar)

  • 1/4 cup Biotrust low-carb whey protein powder - vanilla or chocolate

  • 1/4 cup PBFit peanut butter powder

  • 1/4 cup erythritol, granular, or your preferred granular sweetener

Directions:

  • Line a cookie sheet with parchment paper. Set aside.

  • Combine all ingredients into a medium mixing bowl. Mix with a wooden spoon for the initial blending or use your hands to work the mixture into a uniform dough. You can add a sprinkle of water if needed.

  • Divide the dough onto the prepared cookie sheet into 18-20 even portions. Roll each portion into a ball. The balls will be about 3/4 inch to 1 inch in diameter.

  • Place the cookie sheet with rolled peanut butter balls into the freezer (on a level surface) for at least 30 minutes to set up.

For best results, store peanut butter balls in an airtight container in the freezer. Enjoy!
