Apple Pie Protein Bars (Takes 10 Minutes!)

It's almost fall 🍁 and that makes me think of apple pie 🍎, pumpkin bread 🍞, and other yumminess. 😋 Here's a protein bar recipe that you can whip up in just ten minutes and they taste like an apple pie dessert bar, but so much healthier! These bars are refined sugar-free, gluten free, vegan, dairy free and have a paleo option too! Much better than store bought and really easy to make!

And they're very forgiving too! I ran out of coconut flour and almond butter, so I had to improvise with tapioca flour and used peanut butter instead of almond butter. 🙄 They still turned out great! but I can't wait to try them again using the following ingredients.

Ingredients:

  • 2 cups gluten free oat flour (can substitute for 1 cup coconut flour - I used tapioca flour)

  • ½ cup coconut flour, sifted (can substitute for almond or more oat flour)

  • ½ cup vanilla Biotrust protein powder**

  • 1 TB cinnamon

  • 1 tsp all-spice

  • 1 tsp nutmeg

  • 1/4 cup almond butter (can substitute for any nut butter)

  • ½ cup pure maple syrup (I use Coombs from Costco)

  • 1/2 cup unsweetened applesauce

  • 1 TB dairy-free milk of choice (I used a splash of water)

Instructions:

  1. Line a large baking dish with greased paper and set aside.

  2. In large mixing bowl, combine the flour, protein powder, granulated sweetener, cinnamon, nutmeg and mixed spice and mix well.

  3. In a microwave-safe bowl, combine the nut butter and liquid sweetener and heat until melted. Pour the wet mixture into the dry and mix well. Add the unsweetened applesauce and mix until combined- The batter should be crumbly.

  4. Using a spoon, add the dairy free milk of choice one spoonful at a time until a thick, firm batter is formed.

  5. Transfer to lined baking dish and press firmly. Refrigerate for at least 30 minutes.
